- 1 cup creamy almond butter
- 3/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2–3/4 cup chocolate chips
Instructions
- Preheat oven to 350°F (or 325°F for chewier cookies).
- Mix almond butter and brown sugar until smooth.
- Add egg, vanilla, and baking soda. Mix well.
- Fold in chocolate chips.
- Scoop dough onto a parchment-lined baking sheet.
- Bake for 8–10 minutes until edges are golden.
- Cool on a wire rack before serving.
Notes
- Chill dough for 30 minutes if cookies spread too much.
- Use sugar-free chocolate chips to reduce carbs.
- Store in an airtight container for 3–4 days.
