- 1 cup all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup sugar
- 1 1/2 cups fresh or frozen blackberries
- 2 tbsp lemon juice
- 1/3 cup sugar (for filling)
- 1 tbsp cornstarch
- 3/4 cup shelled pistachios, chopped
- 1/2 cup rolled oats
- 1/3 cup brown sugar
- 2 tbsp flour
- 2 tbsp butter, melted
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8” baking dish with parchment.
- Make crust by combining flour, sugar, and cubed butter. Press into pan and bake for 10 minutes.
- In a saucepan, cook blackberries, lemon juice, sugar, and cornstarch until thick and jammy. Cool slightly.
- In a bowl, mix pistachios, oats, brown sugar, flour, and melted butter to make crumble topping.
- Spread cooled blackberry filling over crust. Sprinkle pistachio crumble evenly on top.
- Bake for 20–25 minutes or until topping is golden brown.
- Cool completely, then refrigerate for 2 hours before slicing into bars.
Notes
- Use fresh or frozen blackberries (if frozen, thaw and drain first).
- For a no-bake version, substitute crust with graham cracker base and chill instead of baking.
- Great for make-ahead dessert trays or summer brunch tables.
