  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup sugar
  • 1 1/2 cups fresh or frozen blackberries
  • 2 tbsp lemon juice
  • 1/3 cup sugar (for filling)
  • 1 tbsp cornstarch
  • 3/4 cup shelled pistachios, chopped
  • 1/2 cup rolled oats
  • 1/3 cup brown sugar
  • 2 tbsp flour
  • 2 tbsp butter, melted

Instructions

  • Preheat oven to 350°F (175°C) and line an 8×8” baking dish with parchment.
  • Make crust by combining flour, sugar, and cubed butter. Press into pan and bake for 10 minutes.
  • In a saucepan, cook blackberries, lemon juice, sugar, and cornstarch until thick and jammy. Cool slightly.
  • In a bowl, mix pistachios, oats, brown sugar, flour, and melted butter to make crumble topping.
  • Spread cooled blackberry filling over crust. Sprinkle pistachio crumble evenly on top.
  • Bake for 20–25 minutes or until topping is golden brown.
  • Cool completely, then refrigerate for 2 hours before slicing into bars.

Notes

  • Use fresh or frozen blackberries (if frozen, thaw and drain first).
  • For a no-bake version, substitute crust with graham cracker base and chill instead of baking.
  • Great for make-ahead dessert trays or summer brunch tables.
