  • Prepare the Filling:

    • In a medium mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy. This ensures a lump-free, well-combined filling, creating a consistent texture.

  • Assemble the Egg Rolls:

    • Fold the bottom corner over the filling, then fold in the sides tightly. This creates a secure base, preventing leaks and ensuring a well-formed roll.
    • Roll the wrapper up tightly toward the top corner, sealing the edges with a bit of beaten egg. This ensures a tight seal during frying, preventing the rolls from opening.
    • Repeat with the remaining wrappers and filling.
  • Heat the Oil:

    • In a deep skillet or saucepan, heat about 2 inches of vegetable oil to 350°F (175°C). Use a thermometer to maintain the correct temperature. This ensures even frying and prevents burning, ensuring a golden-brown texture.
  • Fry the Egg Rolls:
