Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, followed by vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually mix the dry ingredients into the wet ingredients until a dough forms.
- Fold in the chopped brown sugar cinnamon Pop Tarts until evenly distributed.
- Scoop cookie dough balls onto prepared baking sheets, spacing them 2 inches apart.
- Bake for 10–12 minutes until the edges are golden and the centers are just set.
- Let cool on the pan for 5 minutes before transferring to a wire rack.
