These crispy cheesy corn fritters are packed with sweet corn, sharp cheddar, and simple pantry ingredients. They’re quick, golden, and full of flavor—perfect as an appetizer, snack, or side dish.

Ingredients

  • 1 ½ cups corn (fresh, frozen and thawed, or canned and drained)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup all-purpose flour
  • 1 egg
  • ¼ cup milk
  • 1 tsp baking powder
  • 2 tbsp chopped green onions
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp cornmeal or panko (optional, for extra crunch)
  • Oil for frying (canola or avocado)

Instructions

  • In a large bowl, combine corn, cheddar, flour, baking powder, garlic powder, and green onions.
  • In a separate bowl, whisk together egg and milk.
  • Pour the wet ingredients into the dry and stir until just combined. Add salt, pepper, and optional cornmeal.
  • Heat oil in a skillet over medium-high until shimmering.
  • Drop spoonfuls of batter into the hot oil and flatten gently.
  • Cook for 2–3 minutes per side until golden brown and crispy.
  • Remove and drain on a wire rack (not paper towels).
  • Serve hot with your favorite dipping sauce.

Notes

  • For baked fritters: Place on parchment-lined baking sheet, spray with oil, and bake at 425°F for 20–25 minutes, flipping halfway through.
  • Add diced jalapeños, cooked bacon, or chopped red peppers for variations.
  • Great with garlic aioli, ranch, or avocado lime crema!
