- 1 ½ cups corn (fresh, frozen and thawed, or canned and drained)
- 1 cup shredded sharp cheddar cheese
- ½ cup all-purpose flour
- 1 egg
- ¼ cup milk
- 1 tsp baking powder
- 2 tbsp chopped green onions
- ½ tsp garlic powder
- Salt and pepper to taste
- 2 tbsp cornmeal or panko (optional, for extra crunch)
- Oil for frying (canola or avocado)
Instructions
- In a large bowl, combine corn, cheddar, flour, baking powder, garlic powder, and green onions.
- In a separate bowl, whisk together egg and milk.
- Pour the wet ingredients into the dry and stir until just combined. Add salt, pepper, and optional cornmeal.
- Heat oil in a skillet over medium-high until shimmering.
- Drop spoonfuls of batter into the hot oil and flatten gently.
- Cook for 2–3 minutes per side until golden brown and crispy.
- Remove and drain on a wire rack (not paper towels).
- Serve hot with your favorite dipping sauce.
Notes
- For baked fritters: Place on parchment-lined baking sheet, spray with oil, and bake at 425°F for 20–25 minutes, flipping halfway through.
- Add diced jalapeños, cooked bacon, or chopped red peppers for variations.
- Great with garlic aioli, ranch, or avocado lime crema!
