- 200g lo mein or ramen noodles (or spaghetti)
- 6 cloves garlic, finely chopped
- 1 tbsp chili flakes (adjust to taste)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar or lime juice
- 1 tsp sugar (optional for balance)
- 1 tbsp chili oil (optional for more heat)
- 1 tbsp vegetable oil
- 2 scallions, chopped (optional)
- Toasted sesame seeds (optional)
Optional Add-Ins:
- 1 cup sliced vegetables (bell peppers, mushrooms, cabbage)
- 1 cup cooked protein (tofu, shrimp, chicken)
Instructions
- Boil noodles according to package instructions until al dente. Rinse under cold water and toss with a little sesame oil.
- Heat vegetable oil in a wok or pan over medium-high heat. Add chopped garlic and chili flakes. Stir-fry for 20–30 seconds until fragrant (don’t burn the garlic).
- Add soy sauce, rice vinegar, sugar, and chili oil. Stir well to combine the sauce.
- Toss in noodles and stir-fry on high heat for 2–3 minutes until well coated.
- Add optional scallions, vegetables, or proteins and toss to heat through.
- Garnish with sesame seeds. Serve hot.
Notes
- Adjust chili levels by reducing flakes or using milder chilies.
- Add peanut butter or coconut milk to the sauce for a creamy version.
- Use gluten-free noodles if needed and adjust soy sauce accordingly.
