- 6 large eggs
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- 1 cup fresh or frozen chopped spinach (thawed and drained)
- 1/4 cup milk
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Pinch of nutmeg (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
- In a large bowl, whisk together eggs, cottage cheese, and milk until well combined.
- Stir in shredded cheddar cheese, chopped spinach, garlic powder, salt, pepper, and nutmeg.
- Pour the mixture into the prepared pie dish and spread evenly.
- Bake for 35–40 minutes, or until the center is set and edges are golden.
- Let cool for 10 minutes before slicing and serving.
Notes
- Use fresh spinach if available, but frozen works well too—just drain it completely.
- Optional add-ins: mushrooms, onions, or diced peppers.
- Store in the fridge up to 4 days, or freeze individual slices for up to 2 months.
