Mix everything together until well combined, ensuring that the breadcrumbs are evenly coated with the seasoning and mayo.
Step 2: Add the Crab Meat
Next, gently fold in the crab meat. The crab should be flaked into small pieces, ensuring that it’s evenly distributed throughout the mixture. Be careful not to overwork the mixture, as this can cause the crab to become mushy. The goal is to maintain the integrity of the crab meat while ensuring that all the ingredients are well incorporated.
Step 3: Form the Crab Cakes
Once the crab meat is mixed in, divide the mixture into 8 equal portions. Roll each portion into a ball and then roll the balls in the reserved panko breadcrumbs. This will give each crab cake an extra layer of crunch. After the crab balls are coated, gently flatten them into thick patties, about 1 ½ inches in diameter.

Top with the other half of the rolls and brush the tops with the reserved mayo-mustard mixture.
