Ingredients

  • 3 egg yolks
  • 1/4 cup unsalted butter
  • 1 pre-baked tart shell (9-inch)

Instructions

  1. Simmer cranberries with orange juice and zest until they burst.
  2. Blend and strain mixture for smooth purée.
  3. Whisk purée with egg yolks and sugar over heat until thickened.
  4. Remove from heat and whisk in butter until glossy.
  5. Pour curd into pre-baked tart shell.
  6. Bake at 325°F for 10–12 minutes until set.
  7. Cool completely before garnishing and serving.

Notes

  • Use a fine-mesh sieve to get the smoothest curd.
  • Chill for at least 2 hours for best flavor and texture.
