- 1 tbsp oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 tbsp ginger, minced
- 2 tbsp red curry paste
- 1 can (14 oz) coconut milk
- 2 cups chicken or veggie broth
- 12 frozen dumplings (any kind)
- 1 tbsp soy sauce
- Juice of 1 lime
- Fresh cilantro, chopped
- Optional: chili oil, sliced scallions
Instructions
- Heat oil in a pot and sauté onion, garlic, and ginger until fragrant.
- Add curry paste and stir for 1 minute.
- Pour in coconut milk and broth; bring to a simmer.
- Add dumplings and cook until they float and are heated through.
- Stir in soy sauce and lime juice.
- Ladle into bowls and garnish with cilantro and chili oil.
Notes
- You can use any frozen dumplings—pork, chicken, shrimp, or veggie.
- For extra heat, add fresh chili or chili paste.
- Store leftovers separately to prevent dumplings from getting soggy.
