Ingredients

  • 1 tbsp oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 2 tbsp red curry paste
  • 1 can (14 oz) coconut milk
  • 2 cups chicken or veggie broth
  • 12 frozen dumplings (any kind)
  • 1 tbsp soy sauce
  • Juice of 1 lime
  • Fresh cilantro, chopped
  • Optional: chili oil, sliced scallions

Instructions

  • Heat oil in a pot and sauté onion, garlic, and ginger until fragrant.
  • Add curry paste and stir for 1 minute.
  • Pour in coconut milk and broth; bring to a simmer.
  • Add dumplings and cook until they float and are heated through.
  • Stir in soy sauce and lime juice.
  • Ladle into bowls and garnish with cilantro and chili oil.

Notes

  • You can use any frozen dumplings—pork, chicken, shrimp, or veggie.
  • For extra heat, add fresh chili or chili paste.
