Ingredients

  • 1 cup unsalted butter
  • 2 cups brown sugar
  • 1/2 cup light corn syrup
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda

Instructions

  1. Preheat oven to 250°F and line a large baking sheet with parchment paper.
  2. Place popped popcorn in a large mixing bowl.
  3. In a saucepan, melt butter, then add brown sugar, corn syrup, and salt. Stir and bring to a boil.
  4. Let the mixture boil for 5 minutes, stirring occasionally.
  5. Remove from heat and stir in vanilla and baking soda. It will foam.
  6. Immediately pour caramel over popcorn. Stir well to coat.
  7. Spread popcorn onto baking sheet and bake for 1 hour, stirring every 15 minutes.
  8. Let cool completely before storing in an airtight container.
