Tender chicken coated in a honey chipotle glaze, served over rice with fresh vegetables and avocado. A quick and easy meal perfect for beginner cooks.

Ingredients

Scale
  • 2 chicken breasts, diced
  • ¼ cup honey
  • 2 tbsp chipotle peppers in adobo sauce, minced
  • 2 tbsp olive oil
  • 3 cups cooked rice
  • 1 red bell pepper, diced
  • 1 cup corn kernels
  • 1 cup black beans, rinsed and drained
  • 1 avocado, diced
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  • Cook the Chicken:

    • Heat 1 tbsp olive oil in a skillet over medium heat. This creates a hot surface for searing the chicken, ensuring it cooks evenly and develops a flavorful crust.
    • Add diced chicken, season with salt and pepper, and cook until browned and fully cooked, about 6-8 minutes. This ensures the chicken is cooked through and flavorful, providing a tender and juicy protein component.
    • Note: To ensure the chicken is cooked through, use a meat thermometer. The internal temperature should reach 165°F (74°C). This ensures food safety and prevents undercooked chicken. Remove and set aside.
  • Make the Honey Chipotle Sauce:

    • In the same skillet, add the remaining olive oil, honey, and chipotle peppers. Stir well and let it simmer for 2-3 minutes until slightly thickened. This allows the flavors to meld and the sauce to reduce slightly, creating a rich and concentrated glaze.
  • Combine Chicken and Sauce:

    • Return the cooked chicken to the skillet and toss in the honey chipotle sauce until fully coated. This ensures the chicken is evenly coated in the flavorful sauce, providing a consistent taste in every bite.
    • Cook for an additional 2 minutes to allow the flavors to meld. This further enhances the flavor of the dish, allowing the chicken to absorb the sauce and become even more delicious.
  • Assemble the Rice Bowls:

    • Divide the cooked rice among four bowls. This creates the base of the bowls, providing a foundation for the flavorful toppings.
    • Top with chicken, bell peppers, corn, black beans, avocado, and fresh cilantro. This adds the various components of the bowls, creating a colorful and nutritious meal.
  • Finish and Serve:

    • Squeeze lime juice over each bowl and serve immediately. This adds a refreshing tang and enhances the overall flavor, providing a bright and zesty finish.

Notes

  • Use a meat thermometer to ensure chicken is fully cooked.
  • Adjust chipotle peppers for desired spice level.
  • Cook rice ahead of time for convenience.
  • Add vegetables just before serving to maintain crispness.
