Brownie Base:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 2 tablespoons lemon zest
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon salt
Lemon Glaze:
- 1 cup powdered sugar
- 2 tablespoons lemon juice
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, whisk together the melted butter and sugar until smooth.
- Add eggs one at a time, whisking well after each addition.
- Stir in lemon zest and lemon juice.
- Fold in flour and salt just until combined—don’t overmix.
- Pour the batter into your prepared pan and smooth the top.
- Bake for 23–26 minutes, or until a toothpick comes out with a few moist crumbs.
- While brownies are still warm, whisk together powdered sugar and lemon juice to make the glaze.
- Pour glaze over the top and spread evenly.
- Let cool completely before slicing into squares.
Notes
- Use only fresh lemon juice and zest for the brightest flavor.
- Add blueberries or raspberries to the batter for a fruity twist.
- Store in an airtight container at room temperature for 2–3 days or refrigerate up to 5 days.
- Freezes well—wrap each square individually before freezing.
