  • Yield: 12 truffles 1x

Ingredients

Scale
  • 1 cup white chocolate chips or chopped white chocolate
  • 4 oz cream cheese, softened
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Powdered sugar or shredded coconut for rolling

Instructions

  • Melt white chocolate in microwave or double boiler until smooth.
  • Beat softened cream cheese with lemon juice, zest, vanilla, and salt until creamy.
  • Mix in the melted white chocolate until well combined.
  • Refrigerate the mixture for 2 hours until firm enough to roll.
  • Scoop and roll into 1-inch balls, then coat in powdered sugar or coconut.
  • Refrigerate until ready to serve.

Notes

  • Use high-quality white chocolate for the smoothest texture.
  • To make ahead, freeze the rolled truffles up to 2 months.
  • You can add lemon curd for extra flavor, but reduce the lemon juice slightly to maintain consistency.
