Ingredients

  • 1.5 lbs boneless chicken thighs or breasts
  • 3 tbsp extra-virgin olive oil
  • Juice of 1 large lemon
  • 4 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • 46 fresh pita breads
  • 1 cup cherry tomatoes, sliced
  • 1 cup cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1 cup lettuce, shredded
  • 1/2 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce (see notes)
  • Optional: dill, parsley, kalamata olives

Instructions

  • Whisk olive oil, lemon juice, garlic, oregano, thyme, rosemary, salt, and pepper in a large bowl.
  • Add chicken and toss to coat. Cover and marinate for at least 1 hour (up to overnight).
  • Preheat grill, skillet, or oven to medium-high. Cook chicken 4–5 minutes per side (or 20–25 minutes in oven) until golden and cooked through.
  • Let chicken rest, then slice thinly.
  • Warm pita breads until soft.
  • Layer chicken, tomatoes, cucumber, onion, lettuce, feta, and tzatziki onto each pita. Add herbs or olives if desired.
  • Wrap and enjoy Mediterranean Chicken Gyros immediately!

Notes

  • Tzatziki: Combine 1 cup Greek yogurt, 1/2 cup grated cucumber (squeezed dry), 1 clove garlic (minced), 1 tbsp lemon juice, 1 tbsp chopped dill, pinch of salt.
  • For meal prep, keep chicken and toppings separate and assemble gyros just before eating for the freshest flavor.
