Enjoy a flavorful and easy one-pot meal with chicken, peppers, and pasta. Perfect for a quick weeknight dinner.

Ingredients

  • Penne pasta (12 oz)
  • Chicken breast, sliced (1 lb)
  • Chicken broth (3 cups)
  • Heavy cream (1/2 cup)
  • Bell peppers, sliced (1 cup)
  • Onion, sliced (1/2 cup)
  • Fajita seasoning (1 tbsp)
  • Olive oil (1 tbsp)

Instructions

  • Heat Olive Oil (The Oil Operation): Heat olive oil in a large pot or Dutch oven over medium heat.
  • Cook Chicken, Peppers, and Onions (The Sauté Sensation): Add the sliced chicken breast, bell peppers, and onions to the pot. Sprinkle with fajita seasoning and cook until the chicken is cooked through and the vegetables are tender, about 8-10 minutes.
  • Add Pasta and Broth (The Pasta Placement): Add the penne pasta and chicken broth to the pot.
  • Simmer (The Simmering Stage): Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and simmer until the pasta is cooked al dente and the liquid has reduced, about 10-12 minutes, stirring occasionally.
  • Stir in Heavy Cream (The Cream Incorporation): Remove the pot from heat and stir in the heavy cream gently, ensuring it’s fully incorporated.
  • Warm Through (The Warming Process): Return the pot to low heat and warm through for a few minutes, stirring occasionally, until the sauce is heated through.
  • Serve Warm (The Serving Sensation): Serve the chicken fajita pasta warm with extra fajita toppings, if desired, such as sour cream, guacamole, salsa, cilantro, or lime wedges.

Notes

  • Cook chicken through.
  • Simmer until pasta is done.
  • Stir cream gently.
