- 1 lb carrots, peeled
- 3 cloves garlic, minced
- 3 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss carrots with olive oil, minced garlic, salt, and pepper in a large bowl.
- Sprinkle half the Parmesan over carrots and toss again.
- Spread carrots in a single layer on baking sheet.
- Roast for 25–30 minutes, flipping halfway through.
- Sprinkle remaining Parmesan and broil for 2–3 minutes until crispy.
- Garnish with parsley and serve warm.
Notes
- Use freshly grated Parmesan for best results.
- Vegan? Use dairy-free parmesan and avocado oil.
- Pairs well with roast chicken or baked fish.
