Ingredients

  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup shredded sharp cheddar
  • 1/2 cup diced ham
  • 3/4 cup buttermilk
  • 1 large egg
  • 1 tbsp chopped chives (optional)
  • Extra cheese for topping

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix flour, baking powder, and salt.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Fold in cheese and ham.
  5. In another bowl, whisk buttermilk and egg. Add to dry ingredients and mix until just combined.
  6. Turn out dough onto floured surface and shape into a disc. Cut into 8 wedges.
  7. Chill wedges for 15–20 minutes.
  8. Brush tops with cream or egg wash, sprinkle cheese, and bake for 18–22 minutes or until golden.
