- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup shredded sharp cheddar
- 1/2 cup diced ham
- 3/4 cup buttermilk
- 1 large egg
- 1 tbsp chopped chives (optional)
- Extra cheese for topping
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, mix flour, baking powder, and salt.
- Cut in cold butter until mixture resembles coarse crumbs.
- Fold in cheese and ham.
- In another bowl, whisk buttermilk and egg. Add to dry ingredients and mix until just combined.
- Turn out dough onto floured surface and shape into a disc. Cut into 8 wedges.
- Chill wedges for 15–20 minutes.
- Brush tops with cream or egg wash, sprinkle cheese, and bake for 18–22 minutes or until golden.

- Use sharp cheddar for bold flavor.
- Freeze scones before baking for make-ahead convenience.
