- Mix crumbs with softened cream cheese, vanilla, and crushed strawberries.
- Roll mixture into small balls and chill for 30 minutes.
- Melt white chocolate chips in the microwave in 30-second intervals.
- Dip each truffle in melted chocolate and place on parchment paper.
- Chill again until coating is firm, then serve or store.
