- 2 cups mixed greens or spinach
- 1 cup cherry tomatoes, halved
- 1 orange, peeled and segmented
- 1/2 cup shredded carrots
- 1/4 cup sweet corn
- 1/4 red onion, thinly sliced
- 2 tbsp sunflower seeds (optional)
- 1/4 cup crumbled feta (optional)
For the dressing:
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- 1/2 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, add mixed greens, tomatoes, oranges, carrots, corn, and onions.
- In a small jar, whisk together olive oil, lemon juice, honey, mustard, salt, and pepper.
- Pour the dressing over the salad just before serving.
- Toss gently to coat all ingredients evenly.
- Sprinkle with sunflower seeds and feta, if using.
- Serve immediately and enjoy!
