  • 1 cup black beans
  • 1 cup frozen corn
  • 1 cup cooked white rice or brown rice
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat the Oven and Prepare Baking Dish:

    • Preheat the oven to 350 degrees F (175 degrees C). This ensures the oven is at the correct temperature for even baking, preventing uneven cooking.
    • Prepare a greased 9×13 inch oven-safe baking dish. This prevents the peppers from sticking and makes cleanup easier, ensuring a smooth cooking process.
  • Sauté Onions, Garlic, and Ground Meat:

    • In a sauté pan on the stove, heat olive oil on medium-high heat for 3 minutes.
    • Cook onions, garlic, and ground turkey (or beef) in olive oil for 10 minutes or until the turkey is browned. Ensure the meat is cooked through and no longer pink, preventing undercooking and ensuring food safety.
  • Prepare the Bell Peppers:

    • While the turkey mixture is cooking, prepare the peppers.
    • Slice the bell peppers in half from top to bottom.
    • Remove the seeds and any white inner pieces. This creates a clean cavity for the filling, ensuring a consistent texture.
    • Place the pepper halves in the prepared baking dish.
  • Combine Filling Ingredients:

    • When the ground turkey is cooked, remove from the heat.
    • Stir in the tomato sauce, taco seasoning, black beans, corn, and cooked rice until combined. This creates the flavorful taco filling, ensuring a harmonious blend of flavors.
  • Stuff the Peppers:

    • Stuff the peppers with the turkey filling (about ¾ cup filling per pepper).

  • Top with Cheese:
