Instructions
Step 1: Preparing the Dough
Begin by melting 80 grams of butter in a deep pan over medium heat. Once the butter has fully melted, stir in the milk, water, and salt. Allow the mixture to come to a gentle boil. While waiting, combine the flour and baking powder in a separate bowl. Once the liquid mixture boils, gradually add the dry ingredients, stirring continuously to avoid lumps. The dough is ready when it no longer sticks to the sides of the pan. Transfer it to a bowl and let it cool.
Step 2: Incorporating the Eggs
Once the dough has cooled, beat in the eggs one at a time. Ensure each egg is fully mixed before adding the next. This process creates a silky dough that’s perfect for layering. Preheat your oven to 400°F (200°C) and line a 25cm pan with parchment paper. Divide the dough into two equal portions. Spread the first portion evenly in the pan and bake for 20 minutes in the middle rack of the oven. Repeat this process with the second portion to create two layers. Let both layers cool completely.
Step 3: Crafting the Cream
In a medium bowl, beat the eggs with sugar until smooth. Add the flour and milk, stirring to combine. Pour this mixture into a saucepan and cook over medium heat, stirring constantly. When the mixture starts to boil, cook for an additional three minutes, then remove from heat. Allow the mixture to cool completely. Using a hand mixer, cream the butter in a large bowl. Gradually add the cooled mixture, blending until smooth and fluffy.
Step 4: Assembling the Cake
Place the first layer of the baked dough back into the pan and spread a generous amount of cream on top. Smooth it out evenly before placing the second layer of dough over it. Top with the remaining cream, spreading it to the edges. Cover and refrigerate the assembled cake for at least two hours to allow the flavors to meld together.
Step 5: The Finishing Touch
Just before serving, sprinkle the cake with icing sugar or your choice of toppings. The addition of grated chocolate, fresh fruit slices, or crushed nuts can elevate the presentation and add an extra layer of flavor.
