  • 500 ml (2 cups) of milk
  • 150 grams (¾ cup) of sugar
  • 100 grams (1 cup) of all-purpose flour
  • 2 eggs
  • 180 grams (¾ cup) of butter

Instructions

Step 1: Preparing the Dough

Begin by melting 80 grams of butter in a deep pan over medium heat. Once the butter has fully melted, stir in the milk, water, and salt. Allow the mixture to come to a gentle boil. While waiting, combine the flour and baking powder in a separate bowl. Once the liquid mixture boils, gradually add the dry ingredients, stirring continuously to avoid lumps. The dough is ready when it no longer sticks to the sides of the pan. Transfer it to a bowl and let it cool.

Step 2: Incorporating the Eggs

Once the dough has cooled, beat in the eggs one at a time. Ensure each egg is fully mixed before adding the next. This process creates a silky dough that’s perfect for layering. Preheat your oven to 400°F (200°C) and line a 25cm pan with parchment paper. Divide the dough into two equal portions. Spread the first portion evenly in the pan and bake for 20 minutes in the middle rack of the oven. Repeat this process with the second portion to create two layers. Let both layers cool completely.

In a medium bowl, beat the eggs with sugar until smooth. Add the flour and milk, stirring to combine. Pour this mixture into a saucepan and cook over medium heat, stirring constantly.
