  • 1/2 cup breadcrumbs
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 3 cups mashed potatoes
  • 2 cups shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F.
  • In a large bowl, combine ground beef, egg, breadcrumbs, diced onion, minced garlic, Worcestershire sauce, salt, and pepper.
  • Press the meat mixture into the bottom of a greased 9×13” baking dish.
  • Spread mashed potatoes evenly over the meat layer.
  • Sprinkle shredded cheddar cheese generously on top of the potatoes.
  • Add a final layer of crumbled bacon across the top.
  • Cover with foil and bake for 25 minutes.
  • Remove foil and bake for another 10–15 minutes until cheese is melted and bubbly.
  • Broil for 2–3 minutes if you want a golden, crispy cheese top.

Notes

  • Leftover meatloaf or mashed potatoes work great in this recipe.
  • Add sour cream and green onions to the potatoes for a loaded mashed potato meatloaf casserole twist.
  • Try pepper jack or Colby jack cheese for variation in flavor.
  • You can prepare and refrigerate this dish up to 2 days in advance before baking.
