Ingredients

- 1 whole side of salmon (2 lbs)
- 2 tbsp olive oil
- 2 tbsp Dijon mustard
- 2 tbsp maple syrup
- 1 tsp garlic (minced)
- 1 orange (sliced)
- 1 lemon (sliced)
- 2 sprigs rosemary
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Line baking sheet with parchment.
- Lay salmon skin-side down. Pat dry with paper towel.
- In bowl, whisk olive oil, mustard, maple syrup, garlic, salt, and pepper.
- Spread mixture over salmon evenly. Top with orange and lemon slices and rosemary.
- Bake for 20–25 minutes until flaky and golden.
- Serve with sides and garnish with fresh herbs or pomegranate seeds.
Notes
- Can be prepared ahead and gently reheated.
- Pairs well with lemon rice, roasted veggies, or salad.
- Use leftover salmon for brunch or wraps.
