- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup full-fat sour cream
- 2 large eggs
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
Cinnamon Swirl:
- 1/3 cup brown sugar
- 1 tsp ground cinnamon
Streusel Topping:
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 1/2 tsp cinnamon
- 1/4 cup unsalted butter, cold and cubed
Instructions
- Preheat your oven to 350°F and grease a 9×9″ baking pan.
- In a bowl, cream butter and sugar until light and fluffy.
- Add eggs, one at a time, then mix in sour cream and vanilla.
- In another bowl, combine flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet, mixing until just combined.
- Mix together brown sugar and cinnamon for the swirl.
- Spread half the batter in the pan, sprinkle with swirl mixture, then top with remaining batter.
- For streusel, combine all ingredients until crumbly. Sprinkle over the top.
- Bake for 35–40 minutes or until a toothpick comes out clean.
- Cool slightly before slicing and serving.
Notes
- For added crunch, mix chopped pecans or walnuts into the streusel.
- This freezes well—slice, wrap, and store for up to 2 months.
- Try using Greek yogurt if you don’t have sour cream on hand.
