Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup full-fat sour cream
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Cinnamon Swirl:

  • 1/3 cup brown sugar
  • 1 tsp ground cinnamon

Streusel Topping:

  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 tsp cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  • Preheat your oven to 350°F and grease a 9×9″ baking pan.
  • In a bowl, cream butter and sugar until light and fluffy.
  • Add eggs, one at a time, then mix in sour cream and vanilla.
  • In another bowl, combine flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet, mixing until just combined.
  • Mix together brown sugar and cinnamon for the swirl.
  • Spread half the batter in the pan, sprinkle with swirl mixture, then top with remaining batter.
  • For streusel, combine all ingredients until crumbly. Sprinkle over the top.
  • Bake for 35–40 minutes or until a toothpick comes out clean.
  • Cool slightly before slicing and serving.

Notes

  • For added crunch, mix chopped pecans or walnuts into the streusel.
  • This freezes well—slice, wrap, and store for up to 2 months.
  • Try using Greek yogurt if you don’t have sour cream on hand.
