Ingredients

- 1 whole beef tenderloin (3-4 lbs)
- 6 tbsp unsalted butter
- 6 cloves garlic, crushed
- 2 tsp fresh rosemary, chopped
- 2 tsp fresh thyme, chopped
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C).
- Season tenderloin generously with salt and pepper.
- In a skillet, melt butter and sauté garlic until golden.
- Stir in rosemary, thyme, and lemon juice.
- Sear tenderloin on all sides in hot skillet.
- Brush with garlic butter and transfer to oven.
- Roast for 20–25 minutes or until 125°F internal temp.
- Baste with remaining butter every 10 minutes.
- Remove and rest covered with foil for 15 minutes.
- Slice and serve with pan drippings.
Notes
- Use a meat thermometer for best doneness.
- Make garlic butter ahead for easy prep.
- Leftovers make excellent sandwiches or breakfast hash.
