- 1.5 lbs boneless skinless chicken breasts or thighs
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
- Optional: chopped cilantro or lime wedges for garnish
Instructions
- In a medium bowl, whisk together lime juice, olive oil, soy sauce, honey, garlic, and Dijon mustard.
- Place chicken in a resealable bag or dish and pour marinade over it. Seal and refrigerate for at least 2 hours or overnight.
- Preheat your grill or grill pan to medium-high heat. Lightly oil the grates.
- Remove chicken from marinade and grill for 5–6 minutes per side (boneless) or 7–8 minutes per side (bone-in), until internal temperature reaches 165°F.
- Let chicken rest for 5 minutes before serving.
- Garnish with lime wedges or fresh cilantro if desired.
Notes
- You can swap lime for lemon in a pinch, but lime delivers that authentic Key West vibe.
- Use a meat thermometer for perfect doneness.
- Leftovers are great in wraps, salads, or tacos.
