- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1 small onion, finely chopped

- 2 cups elbow macaroni
- 2 tbsp butter
- 2 tbsp flour
- 2 cups milk
- 1 1/2 cups sharp cheddar cheese, shredded
- 1/2 cup mozzarella cheese
- 1/4 cup parmesan cheese
- 1/4 cup sour cream or cream cheese (optional, for extra creaminess)
- 1/4 tsp mustard powder (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix ground beef, breadcrumbs, egg, onion, garlic, ketchup, salt, pepper, and paprika.
- Press meatloaf mixture evenly into a greased 9×13-inch casserole dish. Bake for 25 minutes.
- While the meatloaf bakes, cook macaroni 2 minutes less than package directions; drain.
- In a saucepan, melt butter and whisk in flour. Slowly add milk, whisking until thickened.
- Stir in cheddar, mozzarella, parmesan, and sour cream/cream cheese (if using) until smooth.
- Fold macaroni into cheese sauce.
- Spread mac and cheese evenly over the partially baked meatloaf layer.
- Top with extra shredded cheddar if desired.
- Bake uncovered for 15–20 minutes until bubbly and golden.
- Broil for 2–3 minutes for a crispy top, watching closely.
- Let cool for 5 minutes before serving.
