  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 2 cups elbow macaroni
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/2 cup mozzarella cheese
  • 1/4 cup parmesan cheese
  • 1/4 cup sour cream or cream cheese (optional, for extra creaminess)
  • 1/4 tsp mustard powder (optional)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a bowl, mix ground beef, breadcrumbs, egg, onion, garlic, ketchup, salt, pepper, and paprika.
  • Press meatloaf mixture evenly into a greased 9×13-inch casserole dish. Bake for 25 minutes.
  • While the meatloaf bakes, cook macaroni 2 minutes less than package directions; drain.
  • In a saucepan, melt butter and whisk in flour. Slowly add milk, whisking until thickened.
  • Stir in cheddar, mozzarella, parmesan, and sour cream/cream cheese (if using) until smooth.
  • Fold macaroni into cheese sauce.
  • Spread mac and cheese evenly over the partially baked meatloaf layer.
  • Top with extra shredded cheddar if desired.
  • Bake uncovered for 15–20 minutes until bubbly and golden.
  • Broil for 2–3 minutes for a crispy top, watching closely.
  • Let cool for 5 minutes before serving.
