- 1 cup all-purpose flour
- 1/2 cup old-fashioned oats
- 1/2 cup brown sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 2 cups sliced peaches (fresh or canned, well-drained)
Instructions
- Preheat oven to 350°F and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, mix flour, oats, brown sugar, baking powder, and salt. Stir in melted butter until crumbly.
- Press two-thirds of the mixture into the bottom of the prepared pan. Bake for 10 minutes.
- Meanwhile, beat cream cheese, sugar, egg, and vanilla until smooth and creamy.
- Spread the cream mixture evenly over the baked crust layer.
- Layer sliced peaches over the cream cheese filling.
- Crumble the remaining oat mixture evenly on top.
- Bake for 30–35 minutes or until the top is golden and set.
- Cool completely, then refrigerate for at least 2 hours before slicing into bars.
