  • 1/3 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups sliced peaches (fresh or canned, well-drained)

Instructions

  • Preheat oven to 350°F and line an 8×8-inch baking dish with parchment paper.
  • In a large bowl, mix flour, oats, brown sugar, baking powder, and salt. Stir in melted butter until crumbly.
  • Press two-thirds of the mixture into the bottom of the prepared pan. Bake for 10 minutes.
  • Meanwhile, beat cream cheese, sugar, egg, and vanilla until smooth and creamy.
  • Spread the cream mixture evenly over the baked crust layer.
  • Layer sliced peaches over the cream cheese filling.
  • Crumble the remaining oat mixture evenly on top.
  • Bake for 30–35 minutes or until the top is golden and set.
  • Cool completely, then refrigerate for at least 2 hours before slicing into bars.
