Instructions
- Prepare the Marinade: In a medium-sized bowl, mix the chicken thighs with soy sauce, dark soy sauce, oyster sauce, black pepper powder, and corn starch. Marinate for 10 minutes. Marinating the chicken allows the flavors to penetrate and tenderizes the meat.
- Prepare the Scallions: While the chicken is marinating, chop the scallions, separating the white parts from the green parts. Separating the white and green parts ensures that they are cooked properly.
- Pan-Fry the Chicken: Heat the oil in a non-stick pan over medium heat. Add the chicken pieces and pan-fry until fully cooked. Pan-frying the chicken ensures that it is cooked through and creates a crispy exterior.
- Add the White Parts of the Scallions: Add the white parts of the scallions to the chicken and cook until softened. Cooking the white parts first allows them to soften and release their flavor.
- Cook the Chicken Thoroughly (if needed): If you’re using larger chicken pieces or pieces with bones, cover the pan with a lid and cook until the chicken is thoroughly cooked. Covering the pan helps to cook the chicken evenly and ensures that it is cooked through.
- Add the Green Parts of the Scallions: Add the green parts of the scallions and stir for 10-20 seconds to cook them. Adding the green parts at the end prevents them from overcooking and losing their vibrant color.
- Serve: Sprinkle more black pepper powder or scallions if desired and serve with rice or noodles. Serving with rice or noodles completes the meal and provides a satisfying carbohydrate base.
