Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 cup fresh cranberries
  • 1/2 cup fresh orange juice
  • 1 tbsp orange zest
  • 2 cloves garlic, minced
  • 1/2 small onion, diced
  • 1/4 cup maple syrup or honey
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp rosemary or thyme

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet. Sear chicken thighs skin-side down until golden, about 6-7 minutes. Flip and cook 4-5 minutes more. Remove and set aside.
  3. In the same skillet, sauté garlic and onion until fragrant.
  4. Add cranberries, orange juice, orange zest, chicken broth, maple syrup, and rosemary.
  5. Bring to a simmer, then nestle chicken back into the skillet.
  6. Cover and cook for 20 minutes, until chicken is cooked through and sauce thickens.
  7. Serve hot with your favorite side.

  • Use frozen cranberries if fresh are unavailable—no need to thaw.
  • Bone-in chicken holds flavor better than boneless, but both work.
