Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • Crumb Topping:
  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1 tsp cinnamon
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat oven to 350°F and grease a 9-inch square baking pan.
  2. Cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
  3. Mix dry ingredients separately. Add alternately with sour cream to wet mix.
  4. In another bowl, combine crumb topping ingredients using a fork or hands until crumbly.
  5. Pour batter into pan and top with crumb mixture.
  6. Bake for 35–40 minutes or until toothpick comes out clean.
  7. Cool slightly before slicing. Serve warm or at room temp.

Notes

  • Use Greek yogurt if sour cream is unavailable.
  • For added flavor, swirl in fruit jam or nuts.
