- 35 caramels (unwrapped) – Look for soft caramel candies that will melt easily.
- 1 tablespoon evaporated milk – Adds creaminess to the caramel.
- 1 tablespoon water – Helps to melt down the caramel to the right consistency.
For the Nougat Filling
Nougat is a creamy, sticky element that gives the bars an almost candy-bar-like texture. Combined with marshmallow cream and peanut butter, this layer provides a smooth, silky contrast to the crunchier layers above and below.
- 1/3 cup unsalted butter – The base of the nougat, adding richness.
- 1 1/4 cup white sugar – Sweetens the filling.
- 1/2 cup evaporated milk – For that smooth, creamy consistency.
- 1 (7 oz) jar marshmallow cream – The secret to that fluffy nougat texture.
- 1/4 cup peanut butter – Adds flavor and texture to the nougat. (This is optional but highly recommended for an extra layer of richness.)
For the Rice Krispies Chocolate Ganache Layer
The crispy Rice Krispies in the chocolate ganache topping add a crunchy texture that is the perfect contrast to the chewy caramel and nougat. The ganache itself is rich, smooth, and indulgent.
- 1 cup semisweet chocolate chips – Choose good-quality chocolate for the best flavor.
- 1/4 cup heavy whipping cream – Helps to smooth out the ganache.
- 3/4 cup rice krispies cereal – The crunch that ties everything together.
Instructions
1. Prepare the Chocolate Chip Cookie Layer
- Preheat your oven to 350°F (175°C).
- Lightly grease a 9×9-inch baking pan. If you prefer easier cleanup, you can line the pan with parchment paper.
- Take the prepared cookie dough and press it evenly into the bottom of the pan.
- Bake the dough for 13-15 minutes, or until the top is lightly golden. Once done, allow it to cool completely in the pan before moving on to the next layer.
2. Make the Caramel Layer
- In a saucepan over medium heat, combine the 35 unwrapped caramels, evaporated milk, and water.
- Stir continuously as the caramels melt, making sure the mixture becomes smooth and creamy.
- Once melted, pour the caramel mixture over the cooled cookie layer. Use a spatula to spread it evenly.
- Place the pan in the freezer for 10 minutes to allow the caramel to set.
3. Prepare the Nougat Filling
- In the same saucepan, melt together butter, sugar, and evaporated milk. Bring the mixture to a boil while stirring constantly.
- Once it boils, reduce the heat and let it simmer for 10 minutes. This helps to thicken the mixture.
- In a separate bowl, combine the marshmallow cream and peanut butter. Once the sugar mixture has simmered, pour it over the marshmallow and peanut butter, whisking everything together until smooth.
- Pour the nougat mixture over the caramel layer and return the pan to the freezer for 10 minutes to set the nougat.
4. Make the Rice Krispies Chocolate Ganache
- Place the chocolate chips in a heatproof bowl.
- In a small saucepan, heat the whipping cream until it’s hot but not boiling.
- Pour the hot cream over the chocolate chips and stir until completely melted and smooth.
- Stir in the Rice Krispies cereal to coat the cereal in the ganache.
- Spread the Rice Krispies mixture evenly over the nougat layer.
5. Refrigerate and Serve
- Refrigerate the bars for at least 2 hours to allow all the layers to set properly.
- Once the bars are fully chilled, cut them into squares and enjoy! These bars hold up well at room temperature, but they are also delicious chilled.
