- 1 (20 oz) package cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella pearls
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup sliced olives
- 1/4 cup Italian dressing (or homemade)
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook tortellini according to package instructions. Drain and cool.
- In a large bowl, combine cooled tortellini, cherry tomatoes, mozzarella, cucumber, onion, and olives.
- Add Italian dressing and toss gently to combine.
- Season with salt and pepper.
- Refrigerate for at least 30 minutes before serving.
- Garnish with fresh basil and enjoy.
