  • 2 cups full-fat cottage cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • ½ cup sour cream
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley chopped
Optional Add-ins & Toppings
  • ½ cup cooked spinach drained
  • ½ cup diced roasted red peppers
  • ¼ cup breadcrumbs
  • 1 tablespoon unsalted butter

Method
 

  1. Preheat your oven to 375°F and grease a 9x13-inch baking dish with butter.
  2. In a large mixing bowl, whisk together the cottage cheese, eggs, and sour cream until well combined.
  3. Fold in the shredded mozzarella, grated Parmesan, garlic powder, onion powder, salt, and black pepper.
  4. Add any optional mix-ins like spinach or peppers and taste the mixture for seasoning.
  5. Pour the mixture into the greased baking dish and spread it into an even layer.
  6. Add breadcrumbs if desired, then cover with aluminum foil and bake for 30 minutes.
  7. Remove the foil and bake uncovered for an additional 15 minutes until golden and bubbling.
  8. Let it rest for 5-10 minutes before serving, and garnish with chopped parsley.
