Ingredients
  

For the Base
  • 2 cups Full-fat cottage cheese 4% milkfat
  • 3 tablespoons Honey or pure maple syrup
  • 1 teaspoon Pure vanilla extract
  • 1 pinch Salt
Optional Mix-Ins
  • 1/2 cup Fresh or frozen berries
  • 2 tablespoons Peanut butter
  • 1/4 cup Chocolate chips
  • 1/4 cup Crushed graham crackers

Method
 

  1. Add 2 cups of full-fat cottage cheese, 3 tablespoons of honey or maple syrup, 1 teaspoon of pure vanilla extract, and a pinch of salt to the blender. Blend on high for 60 to 90 seconds until the mixture is smooth.
  2. If using mix-ins, transfer the blended mixture to a large bowl and gently fold in chocolate chips, berries, crushed graham crackers, or peanut butter.
  3. Transfer the mixture to a freezer-safe loaf pan, pressing plastic wrap directly onto the surface to prevent freezer burn. Freeze for at least 4 hours or overnight.
  4. For serving, let the ice cream sit at room temperature for 5-10 minutes before scooping. Run your scoop under hot water for best results.

Notes

Use full-fat cottage cheese for the best texture. Mix-ins are optional and can be customized to preference.
